Corn, or maize to my British friends, can be found in just about every American meal. Even Twinkies are corn.
Some traditional (Slow Food) uses of corn, which you won't find in an average American meal:
- Grits
- Tortillas
- Sweet corn
- Popcorn (not the microwave kind... ask your grandma how to make homemade popcorn!)
Some industrial uses of corn which you can eat every day, but are certainly not to be found in traditional food:
- Animal feed
- Feed for cattle and poultry (definitely not a traditional use)
- Lysine
- Sweeteners
- High fructose corn syrup
- Glucose syrup
- Dextrose
- Confectioner's sugar (sugar with corn starch)
- Thickeners
- Cyclodextrin, maltodextrin, dextrin
- Corn starch
- Xanthan gum (often grown from corn starch)
- Preservatives
- Ascorbic acid
- Lactic acid
- Ethanol (ethyl alcohol)
- Flavorings
- Hydrolyzed corn gluten
- MSG (monosodium glutamate)
- Surfactant
- Lecithin
- Artificial nutrient
- Vitamin C
